In season and delicious, these muffins are an easy way to elevate your breakfast or snack.

  • 1 Cup Unbleached Flour
  • 1/2 Cup Whole Wheat Flour
  • 1/2 Cup Sugar
  • 1/2 Cup Brown Sugar
  • 1/2 Teaspoon Kosher Salt
  • 2 Teaspoons Baking Powder
  • 2 Teaspoons Ground Cinnamon
  • 1/3 Cup Vegetable Oil
  • 1 Large Egg
  • 1/2 Cup Milk
  • 3 Medium Apples
  1. Preheat oven to 400 degrees.
  2. Grease muffin tin or line with paper liners. Set aside.
  3. In medium-size bowl whisk together flours, sugars, kosher salt, baking powder, and cinnamon. Add oil, eggs, and milk. Stir to combine.
  4. Chop 2 apples and fold into batter. Scoop batter evenly into muffin tin.
  5. Thinly slice remaining apple. Top each muffin with apples slices and gently press down.
  6. Place in oven for 15 to 20 minutes until toothpick can be removed cleanly.
  7. Remove from oven and allow muffins to cool 5 minutes before removing from tin. Sprinkle with cinnamon.
