In season and delicious, these muffins are an easy way to elevate your breakfast or snack.
- 1 Cup Unbleached Flour
- 1/2 Cup Whole Wheat Flour
- 1/2 Cup Sugar
- 1/2 Cup Brown Sugar
- 1/2 Teaspoon Kosher Salt
- 2 Teaspoons Baking Powder
- 2 Teaspoons Ground Cinnamon
- 1/3 Cup Vegetable Oil
- 1 Large Egg
- 1/2 Cup Milk
- 3 Medium Apples
- Preheat oven to 400 degrees.
- Grease muffin tin or line with paper liners. Set aside.
- In medium-size bowl whisk together flours, sugars, kosher salt, baking powder, and cinnamon. Add oil, eggs, and milk. Stir to combine.
- Chop 2 apples and fold into batter. Scoop batter evenly into muffin tin.
- Thinly slice remaining apple. Top each muffin with apples slices and gently press down.
- Place in oven for 15 to 20 minutes until toothpick can be removed cleanly.
- Remove from oven and allow muffins to cool 5 minutes before removing from tin. Sprinkle with cinnamon.
