One of the things I like about living on the east coast is the Portuguese influence. One of their specialties is scallops sautéed in butter and garlic. We added the shrimp to make it our own. So simple yet so delicious
- 3 Tablespoons Unsalted Butter
- 3 Tablespoons Olive Oil
- 6 Garlic Cloves (Minced)
- 2 Tablespoons Tomato Paste
- 1/4 Cup Dry White Wine
- 1/4 Cup Fresh Lemon Juice
- 1 Pound Shrimp (Deveined)
- 1 Bunch Green Onions (Sliced)
- 1 Pound Bay Scallops
- 1 Teaspoon Kosher Salt
- 1/2 Teaspoon Freshly Ground Pepper
- In large-size heavy skillet add butter and olive oil. Turn heat to medium. Add minced garlic and sauté 1 minute. Turn heat to medium-high and add tomato paste, wine, and lemon juice. Bring to a boil. Add shrimp and scallops. Cook 3 to 4 minutes until cooked through. Add kosher salt and pepper.
- Remove from heat and transfer to serving plate.
- Serve Immediately
