Make the most of your local summer tomato bounty. Heirlooms should be heavy for their size, be supple but not soft, and have no blemishes. Cracks are A-OK though.

  • 3 Pounds Heirloom Tomatoes
  • 2 Cups Red Wine Vinegar
  • 1/4 Cup Sugar
  • 2 Garlic Cloves (Chopped)
  • 1 Teaspoon Freshly Ground Pepper
  • 1 Tablespoons Kosher Salt
  • 1/2 Cup Olive Oil
  1. Core and cut each tomato into 6 wedges, then cut each wedge in half. In large-size glass bowl, whisk together red wine vinegar and sugar until sugar dissolves. Add tomatoes and all remaining ingredients to vinegar mixture. Let sit at room temperature 30 minutes before serving.
