Fresh and dried ginger combined with orange and honey make for an irresistible ham glaze.
- 2 Large Pieces Fresh Ginger
- 1 Teaspoon Ground Ginger
- 12 Ounces Honey
- 1 Orange (Juice & Zest)
- 1 Ham (8 To 10 Pounds)
- Preheat oven to 350 degrees.
- Grate 1 tablespoon of orange peel and then juice the orange.
- Peel and grate fresh ginger into a medium microwave-safe bowl. Stir in ground ginger, honey, and orange juice. Place in microwave 30 to 60 seconds until honey is runny. Remove from microwave and add 1 tablespoon orange zest into bowl. Fit roasting pan with a rack and fill with enough water to cover bottom by 1/2 inch. Place ham on rack flat side down. Brush ham with half of the glaze. Tightly cover pan with aluminum foil. Cook 14 minutes per pound.
- Halfway through cooking time remove foil and brush with remaining honey mixture. Continue baking, uncovered, basting with pan juices occasionally.
- Remove from oven and let rest a bit before serving.
