I certainly have been in a burrito kind of mood as of late. Burritos are so versatile and easy to make. Perfect for a quickie lunch or dinner.
- 1 1/2 Pounds Chicken Breasts (Cut Into Strips)
- 1 Tablespoon Chile Powder
- 1 Teaspoon Ground Cumin
- 1/2 Teaspoon Kosher Salt
- 16 Ounces Salsa
- 8 Burrito Size Tortillas
- Lettuce
- Grated Cheese
- Sliced Red Onions
- 1 Bell Pepper (Sliced)
- In a large-size skillet cook chicken over a medium-high heat until center is no longer pink. Stir in chile powder, cumin, kosher salt, and salsa. Cook another 5 minutes.
- Spoon filling onto tortillas. Top with lettuce, grated cheese, red onions, and bell pepper slices. Fold and serve.
- Makes 8 burritos
