The nice thing about pesto is that it can and should be used for more than a plate of pasta.

  • 10 Ounces Fresh Basil
  • 4 Ounces Fresh Mint
  • 1 Cup Pine Nuts
  • 1/2 Cup Parmesan Cheese
  • 2 Garlic Cloves
  • 1/2 Cup Olive Oil
  • 1/2 Teaspoon Kosher Salt
  1. In food processor or blender add 5 ounces basil, pine nuts, and garlic. Pulse until blended. Add mint and remaining basil. Pulse until blended. Add Parmesan and kosher salt. Pulse until blended. Add 1/4 cup olive oil and pulse again until well blended.
  2. Transfer to jar filling nearly to the top before adding remaining olive oil. Add remaining olive oil. Cover with a lid and refrigerate until ready to use.
  3. Makes About 2 Cups
