I discovered delicious Georgia peaches at the Village Market and decided to make a Ginger Peach Cobbler from them. All I can say is “YUM!!!”

  • Fruit
  • 4 Cups Fresh Peaches (Peeled & Sliced)
  • 1 Cup Sugar
  • 1 Tablespoon Fresh Lemon Juice
  • 2 Teaspoons Fresh Ginger (Peeled & Grated)
  • 1/2 Teaspoon Ground Cinnamon
  • Batter
  • 1/2 Cup Unsalted Butter
  • 1 Cup Unbleached Flour
  • 1 Cup Sugar
  • 1 Tablespoons Baking Powder
  • 1/2 Teaspoon Kosher Salt
  • 1 Cup Milk
  • 1/2 Teaspoon Cinnamon
  1. Preheat oven to 375 degrees.
  2. Places sliced peaches in large-size bowl. Add sugar, lemon juice, ginger, and cinnamon. Toss well to coat peaches. Let sit for 10 minutes.
  3. Place butter in 13x9 inch baking dish and warm in oven 5 minutes until butter melts. In large-size bowl combine flour, sugar, baking powder and kosher salt. Add milk and stir until wet batter forms. Pour batter over melted butter. Do not stir. Spoon peach mixture evenly over batter. Again, do not stir. Sprinkle evenly with cinnamon. Place in oven for 45 minutes until top is golden brown.
  4. Remove from oven and serve warm with vanilla ice cream.
  5. Serves 8
