This savory salad makes a great vegetarian main or side dish. You can use different colors of cauliflower for a colorful twist if you like.
- 2/3 Cup Sunflower Mayonnaise
- 1 Large Cauliflower (Trimmed & Cut Into Small Florets)
- 1 Medium Red Onion (Thinly Sliced)
- 1/4 Cup Chopped Parsley
- 1/4 Teaspoon Ground Paprika
- 1 Teaspoon Kosher Salt
- 1/2 Teaspoon Freshly Ground Pepper
- 1/2 Cup Grated Parmesan Cheese
- 1/2 Cup Grated Mozzarella Cheese
- 1/4 Cup Sunflower Seeds
- In large-size bowl combine mayonnaise, Parmesan cheese, paprika, kosher salt, and pepper. Add cauliflower, red onion, and parsley. Add mozzarella and mix well. Cover with plastic wrap and place in refrigerator 2 hours until nice and cold. When ready to serve remove from fridge and add sunflower seeds. Serve cold.
