Apple season is here and I love baking with delicious seasonal apples. Apple bread is perfect for breakfast, dessert or an afternoon snack.

  • 1 1/2 Cups Unbleached Flour
  • 1 Teaspoon Ground Cinnamon
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Kosher Salt
  • 1/4 Teaspoon Baking Powder
  • 1/4 Teaspoon Ground Nutmeg
  • 1 Egg (Beaten)
  • 1 Cup Sugar
  • 1 1/2 Cups Shredded Apple (Peeled)
  • 1/4 Cup Olive Oil
  • 1/2 Cup Chopped Pecan Or Walnuts (Optional)
  1. Preheat oven to 350 degrees.
  2. Grease bottom and 1/2 inch up sides of 8x4x2 inch loaf pan. Set aside.
  3. In medium-size bowl combine flour, cinnamon, baking soda, kosher salt, baking powder, and nutmeg. Make a well in center of flour mixture. Set aside.
  4. In medium-size bowl combine egg, sugar, shredded apple, and olive oil. Add apple mixture all at once to flour mixture. Stir just until moistened. Batter should be lumpy. Fold in nuts if using. Spoon batter into prepared pan.
  5. Place in oven for 50 minutes or until wooded toothpick inserted near center comes out clean. Remove from oven and cool, in pan, on wire rack for 10 minutes. Remove from pan. Cool completely on wire rack. Wrap and store overnight before slicing.
  6. Makes 1 Loaf
