Red Pepper Flakes

Movie Night Popcorn Upgrades

January 19, 2021

Most of us have been stuck at home for months now watching everything we can find on Netflix. There’s nothing like getting comfy on the sofa with a bowl of popcorn and a good movie. You might want to get creative and give your movie nights a popcorn upgrade.

Italian Style
Toss popcorn with finely grated Parmesan, a sprinkling of Italian seasoning and red pepper flakes.

Asian Style
Drizzle lightly buttered popcorn with a small amount of sesame oil, then sprinkle with sesame seeds and crushed seaweed snacks.

Crabby Corn
Sprinkle buttered popcorn with Old Bay seasoning, salt, and a pinch of cayenne.

Tex Mex
Toss buttered popcorn with taco seasoning, garlic powder, and a pinch of chipotle chili powder.

Cinnamon Sugar
Toss hot popcorn in cinnamon sugar immediately after popping to create a kettle corn like crunch. Or combine sugar with a pinch of pumpkin pie spice and toss for pumpkin kettle corn.

Almond Joy
Toss popcorn with mini chocolate chips, coconut flakes and chopped roasted almonds.

Salted Caramel
Sprinkle hot buttered popcorn with turbinado sugar, crushed hard caramel candies, and salt.

Essential Flavor Builders

July 5, 2018

The best way to be a good cook is not to worry about being a perfect cook. Give up on perfection, or at least any ideas you may have that perfection is a fixed thing against which you must measure everything you do. Nothing we cook will look will look exactly the same as a picture in a magazine or taste the way our friend’s dish did. Even a familiar recipe will not offer the same result from one day to the next time we make it.

We at Tiny New York Kitchen like to experiment with flavors. Often we reach into our well-stocked pantry and use the essential flavor builders to take a dish to the next level.

Essential Flavor Builders To Keep On Hand:

Vinegars: Vinegar’s complex tang is the secret ingredient in many recipes. We shake a bit of sherry vinegar into bean soup, and add rice vinegar to coleslaw dressings. If you had to choose just one vinegar, we would recommend the mild rice vinegar, but we also keep balsamic, sherry, malt, and cider vinegars on hand.

Anchovies: A filet of anchovy blended into a marinade or dressing adds savory flavor without being too overtly fishy.

Chili Paste: We keep chili paste or bottled Sriracha for drizzling over rice and adding to meat marinades.

Red Pepper Flakes: Many dishes get better with a little kick from red pepper flakes.

Soy Sauce: Soy sauce is a way to add umami flavor and a little salt to dressing and soups.

French Toast Toppings

French Toast Toppings

Ok, most of us love maple syrup on our pancakes and French toast, but sometimes it’s fun to change it up a bit. Here are some interesting alternatives that just may become your new favorites.

Apples & Thyme
Sauté 2 large Gala apples (cut into 1/2 inch thick pieces(, 1 tablespoon fresh thyme leaves and 1/4 teaspoon sugar in 2 tablespoons unsalted butter for 6 minutes until just tender.

Sweet & Spicy Bacon
Cook 1 pound bacon (cut into 1/2 inch pieces) in large-size skillet over a medium heat 10 minutes until nearly crisp. Using a slotted spoon transfer bacon to plate lined with paper towels. Wipe out skillet. Return bacon to skillet and cook 1 minute. Sprinkle with 1 tablespoon brown sugar and cook, tossing, until sugar melts. Drizzle with 2 tablespoons maple syrup and sprinkle with 1/8 teaspoon cayenne. Toss to coat.

Herbed Goat Cheese
In bowl combine 4 ounces goat cheese (at room temperature), 1 tablespoon chopped fresh tarragon and 1 tablespoon fresh parsley, 1 teaspoon lemon zest, and 1/4 teaspoon crushed red pepper flakes.
