4th of July Apple Pie

 

What is more American than Apple Pie?  No 4th of July celebration is complete without a delicious homemade Apple Pie.  The secret here is to use a combination of tart apples, like Winesap or Granny Smith, and sweet apples like Fuji, Jonagold, Idared or Mutsu.  Your patriotic crowd will love this pie. 

 

INGREDIENTS

3 Tablespoons Unbleached Flour

2 Teaspoons Grated Lemon Zest

1/2 Teaspoon Cinnamon

1/4 Teaspoon Ground Allspice

1/8 Teaspoon Kosher Salt

2/3 Cup Sugar

1 Tablespoon Sugar

2 1/2 Pounds Apples Cut Into Wedges

1 Tablespoon Fresh Lemon Juice

Pastry Dough

1 Lightly Beaten Egg

 

Preheat your oven to 425° F.  Place a large baking sheet in the middle of the oven. 

In a large bowl whisk together the flour, lemon zest, cinnamon, allspice, salt and 2/3 cup sugar.  Gently toss with the apples and lemon juice.  Roll out 1 piece of your dough on a lightly floured surface with a lightly floured rolling pin.  You want your dough to be about 13 inches round to fit into a 9 inch glass pie plate.  Keep the other piece of dough in the refrigerator.  Trim the edge making sure to leave a 1/2 inch overhang.  Chill the shell while rolling out the dough for the top crust.  Roll out the top piece of dough on the lightly floured surface into an 11 inch round.  Now you are ready to spoon your filling into the pastry shell.  Cover with the top and trim leaving a 1/2 inch overhang.  Press the edges together then crimp.  Lightly brush the top of the pie with the egg and then sprinkle all over with the remaining tablespoon of sugar.  Cut 3 steam vents in the top of the crust with a small sharp knife.  Bake the pie on the hot baking sheet for 20 minutes.  Then reduce the oven temperature to 375° F. and continue to bake for 40 minutes until the crust is golden and the filling is bubbling.  Remove from the oven and cool your yummy pie on a rack for at least 2 hours.  Serves 6

 

Pastry Dough

INGREDIENTS

4 Cups Unbleached Flour

1 3/4 Cups Shortening

1 Tablespoon Sugar

2 Teaspoons Salt

1 Large Slightly Beaten Egg

1 Teaspoon Red Wine Vinegar

1/2 Cup Water

Mix the flour, shortening, sugar, salt, egg, red wine vinegar and the water together. Place in a ziplock bag. Let the mixture sit in the fridge for 1 hour. Separate into 4 balls of dough. Roll out on a floured surface and place in 9 inch pie pans. Bake in a preheated 425° F oven for 12 minutes for the unfilled crust or use the recipe for a filled pie crust. Makes 2 crusts with tops. The unbaked dough may be kept for 1 week in a ziplock bag in the fridge.

Classic Crème Brûlée

Classic Crème Brûlée

Crème Brûlée is also known as burnt cream, crema catalana or Trinity cream.  Consisting of a rich custard base topped with a layer of hard caramel it is normally served cold.  Crème Brûlée is traditionally flavored with vanilla, but it is sometimes flavored with lemon or orange zest.  The earliest known Crème Brûlée appeared in François Massialot's cookbook written in 1691.  Wherever Crème Brûlée got its start and whatever it is called I know one thing for sure I love this dessert.

 

INGREDIENTS

1 Quart Heavy Cream

1 Split & Scraped Vanilla Bean

1 Cup Vanilla Sugar (Divided)

6 Large Egg Yolks

2 Quarts Hot Water

 

Preheat your oven to 325° F.  In a medium saucepan pour the cream and add the vanilla bean and its scraped contents.  Cook over a medium high heat and bring it to a boil.  Remove from the heat and cover with a lid.  It will need to sit for 15 minutes.  Take out the vanilla bean and either throw it away or save for another use.  In a medium size bowl whisk together the egg yolks and 1/2 cup of the sugar.  Make sure that the sugar and egg yolks are well blended and just begin to lighten in color.  Add the cream a little bit at a time making sure to stir constantly.  Pour into six 8 ounce ramekins.  Put the ramekins into a large roasting pan.  Pour the hot water into the roasting pan just until it hits halfway up the sides of the ramekins. Bake for 40 to 45 minutes just until the Crème Brûlée is set, but still a bit wobbly in the center.  Remove the ramekins from the pan and put into the refrigerator for 3 hours. When you are ready to serve take out of the fridge at least 30 minutes before browning the sugar on the top.  Take the left over 1/2 cup of vanilla sugar and divide equally among the 6 ramekins.  Spread evenly on top.  Using a torch melt the sugar to form a crispy top.  If you do not have a torch then you can use the broiler.  Before serving let the Crème Brûlée sit for 5 minutes.  Serves 6

Classic Chocolate Brownie Cookies

Classic Chocolate Brownie Cookies

 

Everyone loves cookies and for me they’re an essential food group.  The magic is proportions and the quality of the ingredients.  These cookies will transform teatime, bring a smile to a neighbor’s face, picnics and make the sun come out for young ones coming home from school on a rainy afternoon. For efficiency and uniform results, invest in a small handheld cookie scoop.  It looks and works just like an ice cream scoop and cuts your production time in half. 

 

INGREDIENTS

12 Ounces Chopped Bittersweet Chocolate

4 Tablespoons Unsalted Butter

3 Eggs

3/4 Cup Turbinado Sugar

2 Teaspoons Vanilla Extract

1/3 Cup Unbleached Flour

1/4 Teaspoon Baking Powder

1/4 Teaspoon Kosher Salt

1/2 Cup Chopped Pecans or Walnuts (Optional)

 

Preheat your oven to 325° F.  In a double boiler melt the chocolate and butter together over simmering water.  Let cool.  In a large size bowl mix together the eggs, sugar and vanilla.  In a medium size bowl combine the flour, baking powder and salt.  Fold the chocolate and butter mixture into the egg mixture.  Fold the flour mixture into the egg mixture.  Finally, fold in the pecans or walnuts if you are using them.  Make sure not to overmix.  Drop by teaspoonfuls onto a parchment paper lined baking sheet.  Bake for 8 minutes until puffed and cracked.  Makes 4 dozen cookies. 

 

Mixed Berry & Sour Cherry Cobbler

Mixed Berry & Sour Cherry Cobbler

 

I cannot tell you how delicious this cobbler was!  It was the perfect ending to a beautiful Sunday meal.  For this cobbler I used Blackberries, Blueberries, Raspberries, Strawberries and Pitted Sour Cherries.  The combination turned out fabulous. 

 

INGREDIENTS

Filling:

8 Cups Fresh or Frozen Mixed Berries (Blackberries, Blueberries, Raspberries & Strawberries)

2 Pounds Pitted Sour Cherries

3/4 Cup Sugar

2 Tablespoons Finely Ground Instant Tapioca

1/2 Teaspoon Kosher Salt

1/4 Cup Orange Juice

 

Crust:

1 Cup Unbleached Flour

1/2 Teaspoon Baking Powder

1/4 Teaspoon Kosher Salt

8 Tablespoons Unsalted Butter

1 Cup Sugar

2 Eggs

1 Teaspoon Vanilla Extract

 

Preheat your oven to 350° F.  Grind the tapioca in a coffee grinder and set aside.  The tapioca will thicken the juices so that the cobbler isn’t thin. 

For the filling:  In a large size bowl toss together the berries, cherries, 3/4  cup of sugar, ground tapioca, 1/2 teaspoon salt and orange juice.  Transfer to a large glass baking dish (at least 2 1/2 quarts). 

For the crust:  Combine the flour, baking powder and salt in a small bowl.  Set aside.  Cream together the butter, sugar, eggs and vanilla in a large size bowl.  Slowly beat in the flour mixture until a moist dough forms.  Spoon the dough over the filling. 

Bake the cobbler for 1 1/4  hours until the juices are thick and bubbly and the topping is golden brown.  Remove from the oven and cool on a wire rack for 1 hour.  Serve with vanilla ice cream.  Serves 12

 

Belgian Chocolate Brownies

Belgian Chocolate Brownies

 

To get the best brownies use the best chocolate and use a lot of it. 

 

INGREDIENTS

8 Ounces Chopped Unsweetened Belgian Chocolate

1 Cup Unsalted Butter

6 Large Eggs

2 Tablespoons Vanilla Extract

1/2 Teaspoon Kosher Salt

3 1/2 Cups Sugar

2 Cups Unbleached Flour

1 Tablespoon Half & Half

 

Preheat your oven to 375° F.  Line a 13×9 inch baking dish with parchment paper or you can butter the baking dish.  We don’t want the brownies sticking to the pan! 

In a double boiler or a heavy saucepan melt the chocolate and butter together over a low heat.  Stir often and make sure not to overcook the chocolate and butter mixture.  Remove from the heat and set aside to let cool. 

In a large size bowl combine the eggs, vanilla and salt and sugar.  Beat until fluffy.  Add the flour and the chocolate mixture to the egg mixture – alternating.  Mix until the batter is nice and smooth.  Pour the batter into the baking dish and then brush the half & half evenly on top.  Bake for 35 minutes.  The brownies should look risen and lightly cracked on top.  Remove from the oven and cool in the pan before cutting.  Makes 18 brownies.

Camille’s Chocolate Cheesecake

Camille’s Chocolate Cheesecake

If you want friends then make this cheesecake!

INGREDIENTS

Cheesecake Crust:

1 1/3 Cups Graham Cracker Crumbs

1/2 Stick Butter

1 Tablespoon Cocoa

 

Cheesecake:

12 Ounces Semisweet Chocolate (Chopped Small)

3 (8 Ounces Each) Packages of Cream Cheese

1 Cup Powdered Sugar

1 Tablespoon Custard Powder

3 Large Eggs

3 Large Egg Yolks

2/3 Cup Sour Cream

1/2Teaspoon Cocoa (Dissolved in 1 Tablespoon Hot Water)

 

Sauce:

3 Ounces Finely Chopped Bittersweet Chocolate

1/2 Cup Heavy Cream

1 Teaspoon Dark Corn Syrup

 

Preheat your oven to 350° F.  For the crust put the graham crackers in either a blender or food processor.  Add the butter and cocoa.  Pulse until the crumbs are damp.  Pour the crumbs mixture into a 9 inch springform pan.  Spread evenly into the bottom of the pan and press well.  Place into the freezer while you are preparing the filling.

To make the filling:  Boil a small pan of water.  Melt the chocolate in a double boiler and then set it aside to slightly cool.  Beat the cream cheese to get it nice and soft.  Add the powdered sugar and the custard powder.  Beat again until well combined.  Add the 3 eggs and also the additional 3 egg yolks.  Beat for 20 seconds.  Add the sour cream, the cocoa dissolved in hot water and melted chocolate.  Beat until you have a smooth batter. 

Remove the pan from the freezer and pour in the cheesecake filling.  Bake in the oven for 1 hour.  You will notice that the top of the cheesecake will be set, but the underside will have a bit of a jiggle to it.  Don’t worry about that.  Remove from the oven and let the cheesecake fully cool, in the pan, on a wire rack.  When it is fully cooled cover with plastic wrap and put in the refrigerator overnight.  When you are ready to serve remove from the fridge and let it sit on the courter for 45 minutes before removing from the springform pan. 

Remove from the pan and place on a cake plate.  To make the chocolate sauce: Slowly melt the chocolate, cream and syrup in a double boiler.  When the chocolate has almost melted remove from the heat and whisk it to make a smooth sauce.  Let the sauce cool, on the counter, for 10 minutes and then pour over the cheesecake on the cake plate.  Serves 8

 

*Note: You should be able to find custard powder in any British section of the grocery store.  I usually use Birds Custard. 

Coconut Cream Pie

Coconut Cream Pie

 

Forget the diner and make your own delicious Coconut Cream Pie.  It will be much better than the diner’s…trust me!

 

INGREDIENTS

Crust:

6 Ounces Animal Crackers

2 Tablespoons Unsweetened Shredded Coconut

1 Tablespoon Raw Sugar

5 Tablespoons Melted & Cooled Unsalted Butter

 

Filling:

1 Cup Whole Milk

14 Ounces Coconut Milk

1/2 Cup Unsweetened Shredded Coconut

1/2 Cup Plus 1 Tablespoon Sugar

3/8 Teaspoon Salt

5 Large Egg Yolks

1/4Cup Cornstarch

2 Tablespoons Unsalted Butter (Cut Into 2 Pieces)

1 1/2 Teaspoons Vanilla Extract

 

Whipped Cream:

1 1/2 Cups Cold Heavy Whipping Cream

2 Tablespoons Sugar

1/2 Teaspoon Vanilla Extract

1 Tablespoon Toasted Unsweetened Shredded Coconut

 

Move your oven rack to the lower middle and preheat to 325° F.  In a blender or food processor combine the animal crackers, coconut and sugar.  Pulse for about 20 seconds until the crumbs are almost powdery.  Pour the crumbs into a medium size bowl and add the butter.  Stir until the crumbs are evenly moistened.  Pour the moistened crumbs into a 9 inch pie plate.  Using the bottom of a drinking glass press the crumbs evenly into the bottom and up the sides of the pie plate.  Bake for 15 minutes until medium brown.  Remove from the oven and cool for 30 minutes on a wire rack. 

While the crust is cooling make the filling.  In a medium saucepan bring the coconut milk, while milk, shredded coconut, 1/2 cup sugar and salt to a simmer over a medium high heat.  Stir occasionally to make sure that the sugar dissolves.  In a medium size bowl whisk together the egg yolks, cornstarch and 1 tablespoon of sugar until well mixed.  Gradually pour about 1 cup of the hot milk mixture over the egg yolk mixture.  Whisk constantly and whisk well to combine.  Slowly add the remaining milk mixture to the yolk mixture in 4 additions.  Make sure to whisk constantly.  You don’t want to end up with scrambled eggs!  Return the mixture back to the saucepan and cook until thickened and the mixture reached a boil.  Whisk constantly for 1 minute.  The filling must boil in order to fully thicken.  Turn off the heat and whisk in the butter and vanilla until the butter is fully melted.  Give a stir and then pour the hot filling into the cooled pie shell.  Smooth the surface with a spatula.  Press plastic wrap directly against the surface of the filling and refrigerate for 4 hours until firm.  You may refrigerate up to 12 hours. 

Just before serving you want to make the whipped cream.  Beat the cream, sugar and vanilla with an electric mixer for 2 minutes until soft peaks form. Top the pie with the whipped cream.  To toast the coconut take a small dry skillet and toast 1 tablespoon of the unsweetened shredded coconut until it turns a golden brown.  Sprinkle the whipped cream with the toasted coconut.  Cut the pie into wedges and serve.  Makes one 9 inch pie – Serves 8

Ciambellone

Ciambellone or Italian Easter Bread is a ring shaped cake is lightly sweetened and flavored with lemon zest and sometimes dried fruit. Romans like to serve it for Easter breakfast.

INGREDIENTS

4 Cups Unbleached Flour

2 Eggs

1 Teaspoon Vanilla Extract

½ Cup Sugar

½ Cup Milk

¼ Teaspoon Cinnamon

1 Tablespoon Lemon Zest

½ Cup Softened Butter

½ Tablespoon Baking Powder

1 Egg

Powdered Sugar For Dusting

Preheat the oven to 350° F. Place the flour on your work surface creating a well in the center. Alternating, add the dry and wet ingredients to the well. After each ingredient is added mix well with your fingers or a fork. Add more flour if needed to make the dough workable. Knead the dough until it is smooth. Shape the dough into a ring. Beat the egg lightly with water. Brush the top of the ring with the egg wash. Place in the oven and bake for 40 minutes until golden brown. If you want your ring to be perfectly uniform then you can use a springform pan with the center insert. This will allow you to have a picture perfect ciambellone. Dust the ciambellone with powdered sugar or you could use colored sugar as a topping. Serves 8

Coconut Cake

Coconut Cake

This week is Easter and coconut cake is on my mind. I wanted to make a cake that is a bit more traditional. Enjoy this time with family and friends and have a Happy Easter.

INGREDIENTS

1 ½ Cup Unbleached Flour

2 Teaspoons Baking Powder

¾ Teaspoon Salt

½ Cup Softened Butter

1 Cup Sugar

2 eggs

2/3 Cup Milk

1 Teaspoon Vanilla

2/3 Cup Coconut

Additional Coconut For Garnish

Cream Cheese Frosting

Preheat your oven to 350° F. In a large bowl cream together the butter and the sugar. Add the eggs one at a time. Add the vanilla. Next add the dry ingredients alternating with the milk. Mix well. Add the coconut. Pour the batter into two prepared 8 inch round cake pans. Bake for 30 minutes until golden brown. Remove from the oven and cool in the pans, on wire racks, for 15 minutes. Remove from the cake pans and cool completely. Frost and top with more coconut.

Cream Cheese Frosting

8 Ounces Softened Cream Cheese

½ Cup Softened Butter

1 Teaspoon Vanilla Extract

2 Cups Powdered Sugar

In the bowl of a stand mixer with a paddle attachment, combine the cream cheese and butter on medium just until blended. Add the vanilla and beat until combined. With the speed on low, add the powdered sugar in 4 batches and beat until smooth between each addition. Place the frosting in the refrigerator for 5 to 10 minutes before using.

Hot Cross Buns

Hot Cross Buns

Hot Cross Buns is a favorite during spring and the Easter season. Hot Cross buns are a sweet, yeast leavened, spiced roll made with currants or raisins. They have long been a symbol of Good Friday. Each bun has an icing cross on top to signify the crucifixion

INGREDIENTS

1 Package Active Dry Yeast

1 Cup Warm Milk

5 Tablespoons Softened Butter

½ Cup Brown Sugar

2 Large Eggs

½ Teaspoon Ground Nutmeg

½ Teaspoon Ground Cloves

½ Teaspoon Ground Cinnamon

1 Teaspoon Kosher Salt

3 ½ Cups Unbleached Flour

¾ Cup Dried Currants

3 Tablespoons Milk Mixed With 3 Tablespoons Sugar

1 Tablespoon Cold Milk

1 Cup Sifted Powdered Sugar

½ Teaspoon Lemon Juice

Mix the yeast with 4 tablespoons of the warm milk in a small size bowl. Set aside for 5 minutes. In a medium size bowl cream together 4 tablespoons of the butter and brown sugar. When the yeast is frothy, stir it in, along with the spices, salt and remaining warm milk. Beat in the flour one cup at a time until a soft ball of dough can be gathered together. Place the dough on a floured work surface and lightly knead in the currants, adding more flour if necessary to keep the dough from sticking. Kneading should take no more than a few minutes. Using some of the remaining butter to grease a large bowl. Place the dough in a bowl and turn the dough to butter all sides. Cover and set aside in a warm place for 1 ½ hours. The dough should be doubled. Butter two baking sheets with the remaining butter. Punch down the dough and divide it in half. Then divide each piece in half again. Divide each portion of the dough into six equal pieces and shape each into a ball. Place the balls of dough on the baking sheets leaving 2 inches between them. Set aside covered lightly with waxed paper for 1 hour. The dough should have doubled in size. Preheat your oven to 400° F. Carefully slash a cross into the top of each bun using a very sharp knife or razor blade cutting through the skin of the dough at least ¼ inch deep. Try not to compress the bun as you cut. Bake the buns for 20 minutes until they are lightly browned. Just before they come out of the oven, bring milk and sugar mixture to a boil in a small saucepan. As soon as the buns are done, brush them with the milk and sugar glaze. Allow the buns to cool for 30 minutes and then serve them while they are still warm. If you have not cut the cross into the tops of the buns the cross can be applied with the icing. The buns must be completely cooled before the icing is applied. Mix the powdered sugar with the cold milk and lemon juice. Using the handle of a spoon or chopstick spread the icing to form a cross on top or to fill the cross shape cut. Makes 24
