For a simple, but sublime dessert, infuse in-season pears with wine. Serve poached pears with berries, pistachios or mascarpone.
- 2 Cups Dry Red Wine
- 1 Cup Pomegranate Juice
- 1 Cup Water
- 1/4 Cup Packed Brown Sugar
- 2 Cinnamon Sticks
- 8 Whole Cloves
- 4 Whole Allspice
- 6 Bosc Pears (Peeled)
- In 6-quart pot add wine, pomegranate juice, water, brown sugar, cinnamon, cloves, and allspice. Bring to a boil. Reduce heat to a simmer, uncovered, for 10 minutes. Add pears. Turn heat back up to boiling. Reduce heat, cover, and simmer 10 to 15 minutes.
- Remove from heat. Cool pears 2 hours in syrup.
- Serve plain or with berries, pistachios or mascarpone.
