Some of my favorite foods are tomatoes, basil, and cheese and this classic salad makes the most of summer’s best produce. Seasoning tomatoes ahead of time brings out even more of their sweetest flavor.

  • 3 Medium Tomatoes
  • 1 Pint Red Or Yellow Cherry Tomatoes
  • 4 Tablespoons White Balsamic Vinegar
  • 4 Tablespoons Olive Oil
  • 1 Teaspoon Kosher Salt
  • 1/2 Teaspoon Freshly Ground Pepper
  • 1 (8 Ounce) Fresh Mozzarella Ball
  • 1/4 Cup Basil Leaves
  1. Cut tomatoes into thick slices. Halve cherry tomatoes. Add tomatoes to large-size bowl and toss with balsamic vinegar and olive oil. Season with kosher salt and pepper. Let marinate 30 to 60 minutes.
  2. Transfer tomatoes to serving platter using a slotted spoon. Reserving excess liquid. Cut mozzarella in half, breaking up pieces to scatter around platter, if desired. Garnish with basil leaves and drizzle remaining juices from bowl over tomatoes and mozzarella.
  3. Serve immediately.
