Sometimes potatoes can get a bit boring. When I added spinach to potatoes and Parmesan cheese this dish really came alive with flavor. Pair this dish with your favorite meat.
I typically eat chicken breasts, which can turn out to be fairly dry so I’ve switched to making chicken thighs. The thighs really are more tender and flavorful.
If you don’t have Champagne on hand you may use Prosecco or Cava. Both are delicious dry sparkling wines that mix well with juice.
Roasted beets are sweet and tender which makes them a nice addition to salads. Plus, they naturally fit into a gluten-free, paleo, or vegan diet.
Using bison makes these meatballs a bit leaner, but if you can’t find bison then go ahead and use ground beef. Serve alone or over fusilli.
The rice is left out of this cabbage soup, but you can add it back in if you like. Feel free to customize this recipe to your taste and the good news is that it freezes well.
