Camille’s Pita Pizza

Camille created this “Pita Pizza” and loves how it tastes. Try it and see if you like it.

INGREDIENTS

1 Large Pita Flat Bread

½ Cup Humus

½ Cup Feta Cheese

¼ Cup Pitted Olives

½ Cup Diced Artichoke Hearts

¼ Cup Halved Cherry Tomatoes

½ Cup Baked & Shredded Chicken

Apply the humus to the pita flat bread. Sprinkle on the feta cheese. Layer with the olives, artichoke hearts and cherry tomatoes. Finish up with placing the shredded chicken on the top. Bake in a 350° F preheated oven for 15 minutes. Remove from the oven and slice like a pizza. Serves 4

Low Fat Sweet & Sour Chicken

Low Fat Sweet & Sour Chicken

Much healthier than take out! Serve over long grain white or brown rice.

INGREDIENTS

1 Tablespoon Olive Oil

1 Tablespoon Minced Garlic

1 Teaspoon Ground Fresh Ginger

¼ Teaspoon Crushed Red Pepper

1 ½ Pounds Skinless/Boneless Chicken Breasts (Cut into ½ Inch Pieces)

¾ Cup Chopped Onion

½ Cup Chopped Celery

½ Cup Chopped Red Bell Pepper

½ Cup Chopped Green Bell Pepper

15 ¼ Ounces Canned Pineapple Chunks in the Juice (Undrained)

1/3 Cup Soy Sauce

2 Tablespoons Dry Sherry

1 ½ Tablespoons Cornstarch

2 Teaspoons Brown Sugar

¼ Cup Dry Roasted Chopped Cashews

Heat the olive oil in a large skillet over a medium heat. Add the garlic, ginger, red pepper and chicken to the pan. Cook for 5 minutes until chicken is done. Remove the chicken mixture from the pan. Set aside. Add the onions, celery and bell peppers to the pan and cook for 4 minutes until crisp tender. Drain pineapple. Reserve ½ cup of the juice. Add 1 cup of the pineapple chunks to the pan. Cook for 30 seconds. Reserve the remaining pineapple for another use. Combine the reserved ½ cup of pineapple juice, soy sauce (you may want to use reduced-sodium soy sauce), sherry, cornstarch and sugar in a medium size bowl. Stir with a whisk until smooth. Return the chicken mixture to the pan. Stir in the juice mixture and bring to a boil. Cook for 1 minute. Place on a platter and sprinkle with the cashews. Serve over rice. Serves 4

Oven Baked Chicken

Oven Baked Chicken

Parmesan cheese mixed with breadcrumbs creates a golden brown crunchy coating on this oven baked chicken. If you add herbs to the recipe it can change the way it tastes. For flavor variations try mixing ½ teaspoon dried herbs, such as rosemary or sate, into the melted butter mixture.

INGREDIENTS

½ Cup Dried Breadcrumbs

¼ Cup Grated Parmesan Cheese

2 Tablespoons Finely Chopped Fresh Parsley

½ Teaspoon Freshly Ground Pepper

¼ Teaspoon Salt

½ Cup Melted Butter

3 Teaspoons Finely Chopped Garlic

6 (4 Ounce) Boneless Skinless Chicken Breasts

Preheat the oven to 375° F. Combine the breadcrumbs, Parmesan cheese, parsley, pepper and salt in a shallow bowl. Set aside. Combine the butter and garlic in a pie pan. Dip 1 chicken breast at a time into the butter mixture. Place into the breadcrumb mixture. Turn to coat evenly. Place the chicken breasts into an ungreased medium sized baking pan. Drizzle with any of the remaining butter mixture. Bake for 30 minutes until chicken is lightly browned and the juices run clear when pierced with a fork. Serves 6

Chicken Taco Salad

In a hurry? Don’t know what to make for dinner? Trying to cut down on calories? This Chicken Taco Salad recipe is so good and easy to make. Even the Salsa Dressing is low fat. What more could a gal want?!

INGREDIENTS

For the salad:

4 Cups Shredded Romaine Lettuce

2 Cups Chopped Roasted Chicken Breasts

1 Cup Chopped Tomatoes

1/3 Cup Chopped Red Onion

15 Ounces Drained & Rinsed Red Beans

1 Chopped Red Bell Pepper

½ Cup Halved Black Olives

½ Cup Grated White Cheddar Cheese

For the dressing:

2/3 Cup Light Sour Cream

2 Cups Salsa

1 Teaspoon Cumin

5 Teaspoons Fresh Lime Juice

¼ Teaspoon Kosher Salt

To prepare the salad: Roast the chicken breasts in advance (salt & pepper, roast for 45 minutes on 350°F). Let cool a bit before removing the skin and bones. You can use skinless & boneless chicken breasts, but honestly I think that they can be tasteless and dry. Chop the chicken breasts and set aside. Combine the lettuce and the remaining ingredients in a large bowl, including the chicken. Toss gently and serve with the salsa dressing. Serves 4

Salsa Dressing: Combine all of the ingredients in a food processor or blender and combine well. Pour into a bowl or a medium size pitcher and place into the refrigerator, covered with plastic wrap, until ready to use.

Chinese Chicken Salad

Chinese Chicken Salad

This salad is super easy to make and you will love the fried wontons tucked away inside the salad!

INGREDIENTS

3 Tablespoons Hoisin Sauce

2 Tablespoons Peanut Butter

2 Tablespoons Brown Sugar

1 Teaspoon Hot Chili Paste

1 Teaspoon Grated Fresh Ginger

3 Tablespoons Rice Wine Vinegar

1 Tablespoon Sesame Oil

1 Pound Boneless, Skinless Chicken Breast Halves

18 Shredded Wonton Wrappers

2 Cup Shredded Carrots

3 Cups Shredded Romaine Lettuce

6 Chopped Green Onions

¼ Cup Chopped Cilantro

Grill or broil the chicken until it is cooked. Cool, slice and set aside. For the dressing, whisk together, in a small bowl, the hoisin sauce, peanut butter, brown sugar, chili paste, ginger, vinegar and sesame oil. Set aside. Preheat the oven to 350° F. Line a baking sheet with parchment paper. Arrange the shredded wontons in a single layer and bake for 20 minutes until golden brown. Remove from the oven and cool. In a large bowl combine the chicken, wontons, lettuce, carrots, green onions and cilantro. Toss with the dressing and serve. Serves 4

Turkey Burgers

At this time of the year most of us are looking for healthier food options. Turkey is a great substitute for ground beef. Here is a good recipe for Turkey Burgers that I think you and your waistline will enjoy.

INGREDIENTS

3 Tablespoon Olive Oil

¼ Cup Chopped Onion

5 Minced Garlic Cloves

2 Pounds Ground Turkey

1 Teaspoon Kosher Salt

1 Teaspoon Freshly Ground Black Pepper

1 Tablespoon Thyme

1 Tablespoon Minced Sage

1 Tablespoon Minced Rosemary

¼ Cup Chopped Parsley

Heat 2 tablespoons of olive oil in a large skillet over a medium heat. Add the onion and garlic and sauté for 4 minutes. Remove from the heat and place in a large mixing bowl. Add the ground turkey, 1 tablespoon olive oil, salt, pepper, thyme, sage, rosemary and parsley. Mix well. Form 8 equal sized patties. Cook under the broiler for 6 minutes per side (or you can grill these) until evenly browned and cooked through. Serve on toasted buns with lettuce, tomatoes and your favorite condiments. Makes 8 Turkey Burgers.

Tortilla Soup

I really like Tortilla Soup. I used to buy it from Fresh Direct and then decided to make it homemade. Super good!

INGREDIENTS

1 Chopped Onion

4 Minced Garlic Cloves

2 Tablespoons Olive Oil

2 Teaspoons Chili Powder

1 Teaspoon Oregano

28 Ounces Crushed Tomatoes (Canned Will Do Fine)

11 Ounces Chicken Broth

1 ¼ Cups Water

1 Cup Cooked Corn Kernels

1 Cup White Hominy

4 Ounces Chopped Green Chile Peppers

¼ Cup Chopped Cilantro

2 Boneless Chicken Breasts

Crushed Tortilla Chips

Shredded Monterey Jack Cheese

Chopped Green Onions

Cook and cut the 2 boneless chicken breasts into bite sized pieces. In a medium sized pot heat the olive oil over a medium heat sauté the onion and garlic in the oil

until soft. Stir in the chili powder, oregano, tomatoes, broth and water. Bring the pot to a boil and simmer for 10 minutes over a low heat. Stir in the corn, hominy, chilies, beans, cilantro and chicken. Simmer for 10 minutes. Ladle the soup into serving bowls. Top with crushed tortilla chips, cheese and chopped green onion. Serves 8

Perfect Turkey

Perfect Turkey

This recipe makes a super moist and flavorful holiday turnkey. Brining the turkey overnight is worth the time and trouble.

INGREDIENTS

1 Whole Turkey (Approx 18 Pounds)

2 Cups Kosher Salt

1 Cup Melted Butter

2 Large Peeled & Chopped Onions

4 Peeled & Chopped Carrots

4 Chopped Celery Stalks

2 Sprigs Fresh Thyme

1 Bay Leaf

1 Cup White Wine

Remove the neck and giblets from the turkey and set aside. Rub the turkey inside and out with the kosher salt. Put the turkey in a large stock pot filled with cold water and covered. Place in the fridge overnight to allow the turkey to soak (brine). When ready to cook the turkey remove from the fridge and thoroughly rinse the turkey and throw away the brine mixture. Preheat the oven to 350° F.

Brush the turkey with ½ of the melted butter. Place the breast side down on a roasting rack in a shallow roasting pan. Stuff the turkey cavity with 1 onion, ½ of the carrots, ½ of the celery, 1 sprig of the thyme and the bay leaf. Place the remaining vegetables and thyme around the bottom of the roasting pan. Cover with the white wine. Roast uncovered for 4 hours. Carefully turn the turkey breast side up about 2/3 through the roasting time. Brush with the remaining butter. Remove from the oven and allow the turkey to stand for 30 minutes before carving. Serves 12

Caribbean Chicken Kabobs

Caribbean Chicken Kabobs

INGREDIENTS

2 Chopped Green Onions

1 Seeded & Diced Jalapeno Chile

1 Tablespoons Peeled & Chopped Fresh Ginger

2 Tablespoons White Wine Vinegar

2 Tablespoons Worcestershire Sauce

1 Teaspoon Ground Allspice

1 Teaspoon Dried Thyme

3 Teaspoons Olive Oil

1 Teaspoon Kosher Salt

4 Skinless & Boneless Chicken Breasts

2 Red Or Orange Bell Peppers Cut Into Chunks

4 Long Metal Skewers

In a food processor (or blender) combine the green onions, jalapeno chile pepper, ginger, vinegar, Worcestershire, allspice, thyme, 2 tablespoons olive oil and ½ teaspoon salt. Pulse until well blended. In a medium bowl place the chicken pieces. You should cut the chicken into about 12 pieces. Add the green onion mixture to the chicken. Stir well to make sure the chicken is well coated. Cover the bowl with plastic wrap and refrigerate for 45 minutes. In another medium bowl place the red or orange bell pepper pieces. Toss the pepper pieces with the remaining 1 teaspoon olive oil and ½ teaspoon salt. Set aside. Preheat your oven broiler. On 4 metal skewers, alternately thread chicken and pepper pieces. Place the kabobs on a broiler pan. Place the broiler pan on the top rack. Broil for 10 minutes. Turn the kabobs once. Makes sure that the chicken loses it pink color throughout. Remove from the oven and place on serving platter. Serves 4

Chicken Tacos

From living on the West Coast for so long I became spoiled. Everywhere I turned there was authentic Mexican food. Good Mexican food is definitely missing here in New York. I don’t care how hard the Mexican restaurants try they just can’t compete with the West Coast. Period!

INGREDIENTS

1 ½ Pounds Skinless & Boneless Chicken Breasts

½ Cup Garlic Lime Marinade (Lime, Chili Powder, Kosher Salt, Pepper)

¾ Teaspoons Ancho Chili Powder

½ Teaspoon Kosher Salt

¼ Teaspoon Freshly Ground Pepper

1 Can Rinsed & Drained Mexicorn

¼ Cup Fire Roasted Salsa Verde

¼ Cup Diced Red Onion

2 Tablespoons Chopped Fresh Cilantro

1 Tablespoon Fresh Lime Juice

8 Yellow Corn Taco Shells

Shredded Romain Lettuce For Garnish

1 Diced Tomato For Garnish

Lime Marinade: ½ Teaspoon Chili Powder, 1 Squeezed Lime, ½ Teaspoon Kosher Salt, ½ Teaspoon Freshly Ground Pepper

In a medium bowl, toss the chicken and marinade together. Set aside. In a medium bowl mix the mexicorn, salsa verde, onion, cilantro and lime juice. Set aside. Heat a stovetop grill pan over a medium heat. Cook the chicken for 4 minutes per side until cooked through. Remove and set aside. Cut the chicken breast into ½ inch pieces and fill each corn tortilla with the chicken. Divide evenly. Top each with 2 tablespoons of the corn mixture ( mexicorn, salsa verde, onion, cilantro, lime juice, salt, pepper & Ancho Chili Powder). Roll up and garnish with lettuce and tomatoes. Serves 2 or 4
