Small in size, but big in flavor, these biscuits are best right out of the oven and “refreshed” when reheated.

  • 2 Cups Unbleached Flour
  • 1 Tablespoon Sugar
  • 2 Teaspoons Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Kosher Salt
  • 5 Tablespoons Cold Unsalted Butter (Cut Into 1/4 Inch Pieces)
  • 1 1/2 Cups Shredded Sharp Cheddar Cheese (Divided)
  • 3/4 Cup Buttermilk
  1. Preheat oven to 400 degrees.
  2. Line large baking sheet with parchment paper or lightly grease. Set aside.
  3. In large-size bowl combine flour, sugar, baking powder, baking soda, and kosher salt. Whisk to blend. Add butter and cut it into the dry ingredients until mixture resembles coarse meal. Place in refrigerator 10 minutes.
  4. Add 1 cup shredded cheese to flour mixture. Toss to combine. Make a well and add buttermilk. Stir until mixture forms dough that sticks together and pulls away from side of bowl. Let rest 1 minute.
  5. Turn dough out onto lightly floured surface. Using floured hands knead dough two or three times. Pat or roll to be about 2/3 inch thick. Press a 1 1/4 inch biscuit cutter into dough. Place rounds on prepared baking sheet. Space evenly. Gather, shape, and cut scraps. Sprinkle with remaining shredded cheese.
  6. Place in oven 15 minutes until golden brown and crusty. Remove from oven and serve warm. To reheat wrap in foil and place in warm oven 10 minutes.
  7. Makes 18 to 20 Biscuits
