Oatmeal Cranberry Chocolate Chip Cookies spell autumn, especially with the addition of pumpkin seeds.
- 2/3 Cup Butter (Softened)
- 2/3 Cup Brown Sugar
- 2 Large Eggs (Room Temperature)
- 1 1/2 Cups Old Fashioned Oats
- 1 1/2 Cup Unbleached Flour
- 1 Teaspoon Baking Soda
- 1/2 Teaspoon Kosher Salt
- 1 Cup Dried Cranberries
- 2/3 Cup Chocolate Chips
- 1/2 Cup Pumpkin Seeds
- Preheat oven to 350 degrees.
- In large-size bowl beat butter and brown sugar until light and fluffy. Add eggs. Mix well.
- In medium-size bowl combine oats, flour, baking soda, and kosher salt.
- Add flour mixture to butter mixture in several additions. Mix well after each addition. Stir in dried cranberries, chocolate chips, and pumpkin seeds.
- Drop by rounded teaspoonfuls onto ungreased cookie sheets. Place in oven 10 to 12 minutes until golden brown.
- Remove from oven and cool on wire rack.
- Makes About 2 1/2 Dozen
