  • 2/3 Cup Butter (Softened)
  • 2/3 Cup Brown Sugar
  • 2 Large Eggs (Room Temperature)
  • 1 1/2 Cups Old Fashioned Oats
  • 1 1/2 Cup Unbleached Flour
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Kosher Salt
  • 1 Cup Dried Cranberries
  • 2/3 Cup Chocolate Chips
  • 1/2 Cup Pumpkin Seeds
  1. Preheat oven to 350 degrees.
  2. In large-size bowl beat butter and brown sugar until light and fluffy. Add eggs. Mix well.
  3. In medium-size bowl combine oats, flour, baking soda, and kosher salt.
  4. Add flour mixture to butter mixture in several additions. Mix well after each addition. Stir in dried cranberries, chocolate chips, and pumpkin seeds.
  5. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Place in oven 10 to 12 minutes until golden brown.
  6. Remove from oven and cool on wire rack.
  7. Makes About 2 1/2 Dozen
