When shopping for okra buy tender, young pods less than 4 1/2 inches long, without any brown spots. In this down-home favorite, okra gets a classic cornmeal coating. If pods are small, there is no need to cut them.
- 1 Large Egg
- 12 Ounces Okra (Cut Crosswise Into 1 Inch Pieces)
- 1/2 Cup Cornmeal
- 1/2 Teaspoon Kosher Salt
- 1/8 Teaspoon Ground Cayenne
- Vegetable Oil For Frying
- In medium-size bowl lightly beat egg. Add okra and toss to coat. On large-size plate combine cornmeal, kosher salt, and cayenne. Add okra and toss to coat.
- In heavy large-size skillet heat 1/4 inch vegetable oil over a medium-high heat until hot. In small batches, fry okra 2 to 3 minutes until golden. Transfer to paper towels to drain.
- Serve immediately.
- Serves 4
