This dish uses the technique of frying in hot oil until they the beans become crunchy and flavorful. You could add pork or crumbled feta cheese if you want to. I have been known to eat the cold from the fridge the next day.

  • 1/2 Cup Olive Oil
  • 1 Pound Green Beans
  • 1 Teaspoon Kosher Salt
  • 6 Garlic Cloves (Thinly Sliced)
  • 1 Tablespoon Capers (Drained And Chopped)
  • 1 Teaspoon Crushed Red Pepper Flakes
  1. Heat oil in large-size skillet over a high heat. Add green beans and cook 3 minutes until browned underneath. Cover with a splatter screen if the oil is splatter. Don’t toss, but turn beans with tongs and cook until beans are browned evenly. Continue to cook another 5 minutes, turning occasionally, until browned all over. Season with kosher salt. Add garlic, capers, and red pepper flakes. Cook, turning occasionally, about 1 minute just until garlic turns golden.
  2. Transfer beans to serving platter. Spoon garlic mixture with some oil over. Season with additional kosher salt if needed.
  3. Serve warm.
