When fall gives us apples we make delicious Apple Blondies!

  • 1/3 Cup Butter (Softened)
  • 1 Cup Sugar
  • 1 Teaspoon Vanilla Extract
  • 1 Teaspoon Ground Cinnamon
  • 1/4 Teaspoon Ground Nutmeg
  • 1 Large Egg (Room Temperature)
  • 1 Cup Unbleached Flour
  • 1/4 Teaspoon Baking Soda
  • 1/4 Teaspoon Kosher Salt
  • 2 Apples (Peeled)
  • 1/3 Cup Chopped Pecans
  • 1/3 Cup Butterscotch Chips
  1. Preheat oven to 350 degrees.
  2. Grease 9 or 10 inch square pan. Set aside.
  3. Dice peeled apples into 1/2 inch pieces. Set aside.
  4. In large-size bowl cream butter and sugar. Add vanilla, cinnamon, and nutmeg. Beat in egg until nice and smooth.
  5. In small-size bowl combine flour, baking soda, and kosher salt.
  6. Gradually add flour mixture to butter mixture until blended. Mixture will appear rather stiff. Stir in diced apples, chopped pecans, and butterscotch.
  7. Transfer batter into prepared baking dish.
  8. Place in oven 35 to 40 minutes until golden brown. Remove from oven and cool one hour before cutting into bars.
  9. Serve plain or with vanilla ice cream.
  10. Makes About 10 Large Bars
