When fall gives us apples we make delicious Apple Blondies!
- 1/3 Cup Butter (Softened)
- 1 Cup Sugar
- 1 Teaspoon Vanilla Extract
- 1 Teaspoon Ground Cinnamon
- 1/4 Teaspoon Ground Nutmeg
- 1 Large Egg (Room Temperature)
- 1 Cup Unbleached Flour
- 1/4 Teaspoon Baking Soda
- 1/4 Teaspoon Kosher Salt
- 2 Apples (Peeled)
- 1/3 Cup Chopped Pecans
- 1/3 Cup Butterscotch Chips
- Preheat oven to 350 degrees.
- Grease 9 or 10 inch square pan. Set aside.
- Dice peeled apples into 1/2 inch pieces. Set aside.
- In large-size bowl cream butter and sugar. Add vanilla, cinnamon, and nutmeg. Beat in egg until nice and smooth.
- In small-size bowl combine flour, baking soda, and kosher salt.
- Gradually add flour mixture to butter mixture until blended. Mixture will appear rather stiff. Stir in diced apples, chopped pecans, and butterscotch.
- Transfer batter into prepared baking dish.
- Place in oven 35 to 40 minutes until golden brown. Remove from oven and cool one hour before cutting into bars.
- Serve plain or with vanilla ice cream.
- Makes About 10 Large Bars
